Dents de Loup (Wolf's Teeth Cookies)

Description
"Wolf's Teeth" are egg and brandy cookies popular throughout Alsace. The cookies will be somewhat flat and cake like. In Alsace, there are special molds to make these cookies. The molds are triangular to give the cookies a sharp point like a wolf's tooth. You may readily use a cookie cutter.

Servings:

Ingredients
2 egg yolks
3/4 cup butter, melted
1 cup granulated sugar
3 large eggs, beaten
2 cups flour
2 Tablespoons eau-de-vie or brandy
juice of 1/2 lemon
2 teaspoons active dry yeast
1/2 cup crème fraîche or heavy cream

Method
Preheat the oven to 300°F. Butter & flour a cookie sheet.

1. Beat the egg yolks with the butter and sugar.
2. When the mixture is fluffy, stir in the whole eggs.
3. Add the flour, eau-de-vie, lemon juice and yeast and mix thoroughly.
4. Stir in the cream.
5. Using a small spoon, drop the batter onto the prepared cookie sheet.
6. Bake for 15 minutes.
