Jicama-Pineapple Salad with Lime Vinaigrette

Ingredients
1/3 cup canola oil
3 Tbsp freshly squeezed lime juice
1 Tbsp minced garlic
1/4 cup chopped fresh cilantro leaves
1/4 tsp ground cumin
Salt
Freshly ground black pepper
1 small jicama, grated with largest holes of
grater
1 cup diced fresh pineapple

Method
Whisk together the oil, vinegar, garlic, cilantro, and cumin in a small bowl to blend. Season with salt and pepper to taste. Combine jicama and pineapple in a bowl and toss with just enough dressing to coat evenly.


Notes
Jicama is a mild root vegetable with a neutral taste makes it a perfect ?sponge? for flavor. Peel off the brown skin to uncover a cream-colored interior with a crisp texture. Take extra care to remove the cilantro leaves from the tough stems before chopping
