Ingredients |

| 4, 6-ounce salmon fillets 1/4 cup plus 2 Tbsp olive oil 1 lime, halved 2 Tbsp lime juice 2 ripe avocados, cut into small dice sea salt freshly ground pepper |

Method |

| 1. Place salmon fillets (skin side down) on a baking sheet lined with foil. 2. Squeeze juice from lime halves equally over fillets. Drizzle with 2 Tbsp olive oil. Sprinkle with salt and pepper. 3. Set aside. 4. Preheat broiler. 5. In a small bowl, gently combine diced avocados, 1/4 cup olive oil, and 2 Tbsp lime juice. Let stand at room temperature. 6. Broil fish fillets without turning about 10 minutes, or until fish is opaque. 7. Transfer fillets to plates, garnish with avocado mixture and serve immediately. |
