| 1 cup flour 1 cup Weisenberger or other course ground cornmeal 3/4 cup sugar 1 tsp baking soda 1 tsp baking powder 1/2 tsp salt 1 cup buttermilk (not low fat) 1 egg 1/3 cup vegetable oil 1 quart fresh strawberries, sliced |

| Preheat oven to 350 degrees. In a large bowl, whisk together the flour, cornmeal, baking soda, baking powder and salt. Set aside. In another small bowl, whisk together the buttermilk, egg and vegetable oil. Add wet ingredients to the dry mixture and blend thoroughly. Pour into an 8 x 8-inch pan prepared with non-stick spray. Bake 35 minutes at 350 degrees F. or until done. Cool slightly, cut into squares. Split each one and fill with sliced strawberries tossed with a little sugar. Also great with blueberries or peaches. |
