Tortilla de Patatas
Not your Mexican flat bread, the Spanish version is an
omelet made with potatoes and is found in every tapas bar in Spain. Quick to
cook and great at room temperature.
Olives Stuffed with Chili Almonds
Chorizo in Red Wine
Slice the (Spanish) chorizo, place in a casserole with
wine, garlic, and herbs, bake and serve with extra bread to soak up the juice.
Stuffed Mushrooms
These beauties can be made as much as 12 hours in advance
and then cooked just before serving.
Braised Fennel
Slightly sweet and very soothing. A quick dish that is surprisingly satisfying as a stand alone course.
Halftime Show
Paella
This most famous of Spanish dishes deserves it's reputation. Our
version works well in the oven making it much easier to prepare. Excluding chicken and chorizo and incorporating fish and additional seafood can take the overall menu into a balanced direction if some of your guests are non meat eaters.

Bacaloa Croquettes
Almost as ubiquitous as the Spanish tortilla, these fritters made with salt cod (bacaloa) are surprisingly mild and delicious.
